About the Authors

rosalie-picture-used-on-websiteRosalie Hurd, B.S., nutritionist and home economist, is actively engaged in promoting the principals of abundant health, the art of simple, wholesome food preparation, proper diet and nutrition counseling. She and her husband Dr. Frank Hurd, have conducted numerous lifestyle seminars in the U.S. and various foreign countries, teaching natural methods, and demonstrating the preparation of whole foods with enthusiasm, and in a simple, yet appealing and attractive manner.

Rosalie, a life-long vegetarian, is the mother of five, healthy, grown children, grandmother of eight, great-grandmother of three, wife, sister, and aunt. She met her husband at Atlantic Union College during their student years. In addition to caring for the needs of her busy household, she is involved in the on-going ministry of Ten Talents, and serves as secretary and office assistant to her husband, Dr. Frank Hurd. She is a former home schooling mom, seamstress, Home Economics teacher, and academy food service director.

In a Mrs. America contest of culinary skills, Rosalie Hurd was chosen the winner, selected from a group of 50 participants, being the only contestant who prepared a completely vegetarian dinner. For the Mrs. America winning meal – see Ten Talents, chapter 19, Meal Planning and Menus, pg. 586   Guests and friends served vegetarian meals in the home of Dr. Frank and Rosalie have asked many questions like: “How do you season those delicious Italian salads?” “When should I start my baby on solid foods,” “What do you eat to make your hair grow?” and scores of other questions about diet, and natural foods.

The ever-increasing interest in a healthy lifestyle, becoming a vegetarian, and the simple preparation of whole foods, inspired Rosalie to revise and expand the original Ten Talents (375pgs), first published in 1968 (over 46 years ago), into the current expanded Pictorial Edition (English and Spanish) with 675 pgs. Although she makes no claim of being a photographer, the mouth-watering foods pictured in her books were primarily prepared, arranged, and photographed by the author, Rosalie Hurd.

The Ten Talents Award-winning classic, updated in 2012 remains the most comprehensive vegetarian/vegan cookbook on the market today… an indispensable “old faithful” with over 1,000 heart-healthy recipes, lavishly illustrated in full color. The Hurds continue to receive many beautiful letters from grateful people who are experiencing healthy lifestyle changes through better choices.

In 2013, Mrs. Hurd published Better Choices –Fresh & Healthy Cuisine. This new title was born from a desire to feature a wider variety of fresh foods, breakfast smoothies, more salads, more raw fruits, nuts, and vegetables, a collection of some new and best-loved recipes from Ten Talents, and the ten timeless secrets for abundant health. Better Choices can help you stretch your food dollar and assist in the planning and preparation of healthy affordable meals.

Rosalie is dedicated to sharing God’s wonderful “Eden diet” that has brought renewed strength and health to so many people around the globe through Ten Talents and Better Choices!

 

frank Dr. Frank Hurd, D.C., M.D., has spent more than 50 years in the study and practice of alternative health  and wellness. He has earned degrees in Chiropractic, Naturopathy, and Medicine, and still prefers preventive methods and natural remedies for promoting health. He is currently engaged in active practice, and lectures on healthful principles that support vibrant health through a vegetarian-lifestyle, which he believes would enhance man’s relationship to his Creator.
